Kiwi – One Of My All-Time Favorite Foods As A Type 1 Diabetic
I am excited to talk about one of my absolute favorite foods in the WORLD: kiwi!
Because of my insulin resistance as a type 1.5 diabetic I limit the amount as well as type of fruits I eat. I am very selective about the fruits I eat. I don’t eat many fruits but kiwi is definitely one of them. One of the many reasons I integrated kiwi into my Red Sugar Life is because it is a low glycemic index food. There are only 11 grams of carbs in 1 kiwifruit, so I don’t have to worry about kiwi spiking my blood sugar levels (blood glucose levels) too high.
Kiwi Is Amazing For Supporting My Immune System
As I am a type 1 diabetic (which is an autoimmune disease), my immune system needs all the support it can get. There at least 115% of daily recommended vitamin C in just 1 kiwifruit, which is amazingly high! This is one of the reasons it is one of my absolute FAVORITE foods for supporting my immune system!
I used to eat oranges and/or grapefruit for my vitamin C intake and while I like them, I was not comfortable eating them due to their higher glycemic index and their vitamin C is much lower. I switched to tangerines/smaller oranges but I wasn’t all that happy with them. In my search for a more suitable fruit for me, I found kiwi. Kiwi GREATLY surpassed my expectations and requirements!
With kiwi, I get my ENTIRE day’s worth of vitamin C in just one kiwi and so much more! Another one of my all-time favorite foods is lemon, they are a staple in my Red Sugar Life as well. They are also low in glycemic index and also have a good amount of vitamin C and other goodies. While kiwi has more vitamin C per fruit than lemons, I use lemons for soooo many things in addition to vitamin C intake. They both have their unique place in my Red Sugar life.
Kiwi is Loaded With Vitamins and Nutrients
Kiwi has lots of dietary fiber and that also helps to offset the impact of the sugars in kiwi on my blood sugar levels. It also promotes digestion health too. Here are some of kiwi’s nutritional benefits:
- It has protein! Yup, each kiwi contains at least 1 gram of protein.
- It contains vitamin A, which is good for the eyes.
- It contains vitamin E, which is great for hair, nails, and skin!
In addition to its wonderfully high vitamin C, Kiwi is high in antioxidants too, which help fight inflammation in the body as well as illness and infection! Kiwi is a superfood for me.
How I Eat Kiwi – And Yes, I Eat The Kiwi Skin Too!
I don’t need to peel it, I eat them whole, skin and all. The skin is super nutritious and I enjoy it! Its flavor and texture blends in perfectly with the green fleshy part. At the time I eat it the skin is moistened as I always wash my fruit before eating, so the tiny fibers on the kiwi do not bother me as I eat, I don’t feel them at all. The seeds are super tiny and do not bother me nor do they interfere with eating the fruit.
I love the taste of kiwi, its flavor is unique to me. It’s a delightful balanced blend of tartness, sweetness, and the lighter colored part in the middle is so smooth it seems creamy. When I first tried kiwi the taste reminded me of strawberries. Kiwi tastes awesome, and when it is perfectly ripened, it is magical.
